I know we've been down this road before, but when using hair from curves, how can I get the hair to interpolate cloer to the guides. It interpolates directly through the shoulder because changing guide proximity distance does nothing when I change the value. Can you make a video about how to achieve this. 

There's a lot of Ornatrix videos, but nothing about this subject...which is pretty important for long hair characters using dynamic guides.

In the pics, you can see that the guides go around the shoulders, but the hair interpolates between the guides and cuts through the shoulder.

This is caused by the hair interpolation. In this case you should add the simulation directly to the hair, not the guides. Maybe you can add a hair parting in this area instead, and keep the simulation on the guides.

That's the problem. I'm simulating with cinema 4d simulation, not Moov.

I can't help you with the C4D native simulation system. 

In this case you should try creating a hair parting to divide the way the hair falls. It can be done in Hair from Guides with the parting tool, using a strand channel or strand groups.
